Meat Recipes with Dried Cherries

By Joan

Meats are indeed tasty, chewy and juicy. For some, a meal is not complete without pork, chicken, or beef. A family dinner or a special occasion is not so heartfelt without meat. And even a happy meal from your favorite fast food restaurant does not seem so “happy” without a thick beef burger parry, a crispy fried chicken, or a tender hotdog on your spaghetti you’ve always loved.

However, the habitual routine of eating meat could rather be unhealthy and unenticing. Once you stuff yourself with too much meat, your palate might find it too typical, that you end up craving for a more exotic menu. Worry no more. With dried cherries, you can do a lot of twists and turns on your meat dishes― exciting your taste buds without compromising your health.

meat with dried cherriesTo inspire you a little more, here is a short list of meat menus that you can prepare with dried cherries.

Ham with dried cherries. This recipe includes glazed ham, dried cherries, and caramelized onions. To prepare, you have to roast your ham in a heated oven (162.77 degrees Celsius) for 45 minutes to 1 hour until the meat heats up to 60 degrees Celsius. Brush ham with glaze 5 minutes before you take the meat out of the oven. The glaze can be prepared by combining honey, mustard and cider vinegar. Meanwhile, you can cook the caramelized onions. In a covered Dutch oven, cook the onions in hot butter until the onions are soft. Stir occasionally. Add dried cherries, cardamom, cider vinegar, and honey. Let it simmer for 5 minutes and then add some toasted almonds. When done, slice the ham and serve it with the caramelized onion.

Cherry Cornbread Turkey Stuffing. A cornbread is bread that is made from cornmeal. Cut this bread into cubes (preferably 1 inch in size).Mix olive oil, thyme, salt, pepper and your cubes in a bowl. After mixing and tossing them well, bake the cubes for 15 minutes under moderate temperature. While baking, you can cook the sausage for 15 to 20 minutes. When these two are done, combine them in the bowl where you tossed the cubes. Heat some olive oil, butter, onions and celery in a saucepan at a moderate heat. After 10 minutes, stir in the dried cherries and cook for another 5 minutes. When finished, fold the cooked mixture into the cornbread. And then, toss some thyme, parsley and sage with the cornbread. Slowly sprinkle the broth. You can also add some seasoning according to your preference. Cool and then stuff it into the turkey.

Pork roast with dried cherries and Rosemary. The sweet and tangy taste of dried cherries is a good complement to the aroma of rosemary. Rosemary is an aromatic needle-shaped leaf that is used as a food flavoring. Combined with roast pork, rosemary and dried cherries will surely add a zesty flavor to kill the blandness of the meat. You can start preparing this by preheating the oven to 176.66 degrees Celsius. Mix the dried cherries, rosemary, dry red wine, cranberry juice, vinegar, and shallots in a bowl. Pour this over the rinsed pork and marinate it overnight. Make sure that every side of the pork is soaked into the marinade. The next day, you can cook the meat in a heated olive oil for 5 minutes or until all sides are brown. Once cooked, pour the marinade over the pork and roast it in the oven for 20 to 25 minutes. When the pork is already pinkish in color, remove it from the oven and cover it with foil. Cool it for 10 minutes. Put some seasoning (salt and pepper) and slice it. Serve the meat with the pan juices spooned over on top.
